My kids love pancakes and this little recipe is not only easy and healthy, my toddlers have no idea theses are good for them and scoff them down and ask for more…so I’m happy to make these a few times a week for the whole family!
- 1 banana
- 1 egg
- 25g of porridge oats (optional)
- A pinch of cinnamon or vanilla extract
Whizz these ingredients in your blender until nice and smooth.
Heat a non stick frying pan over medium heat. Melt a little vegetable oil or coconut oil in the pan spreading it evenly then add the mixture a little at a time so that each pour is pancake sized. You will see the pancakes start to bubble at the edges so get ready to flip them
You can serve with anything really:
- Peanut butter
- Ice cream
- Maple syrup
- Chocolate chips
